Barry Larsen from on10.net came up with a list of multitouch devices to run the freshly launched Windows 7 OS on. Capacitive is the way to go, if you ask me, followed by optical solutions and resistive display devices. The list can be seen below:

Notice that most computers are notebook/tablets, but monitors are also included on the list, as well as all-in-one computers and notebook/clamshells. HP is the company with the most products fitting this category, but Dell and Acer have also got a couple of pretty good devices, as well.
